The natural sweetness of these pancakes and the warmth of the cinnamon makes them taste like a real treat but they’re super healthy and perfect for children and for BLW.

Makes 6 medium sized pancakes
Apple and Banana Pancakes
Ingredients
1 apple grated
1 banana
1/4 tsp cinnamon powder
1 egg
50g rolled oats
A little butter or coconut oil for frying
Method
Use a fork to mash a banana then mix in the apple, and whisk in the egg
Add the oats and cinnamon to the mixture and mix well
Melt the butter in a non stick pan until it starts to bubble
Spoon the oat batter into a frying pan to make 6 small-medium sized pancakes. You can do this in two batches if needed
Fry on a low-medium heat (to avoid burning) for 3 minutes each side
Serve with yoghurt and fresh fruit. Store in the fridge for 3 days. Suitable for freezing
This recipe needs flour. It doesn’t turn out at all without it.
I found this recipe sounded great but when I made it the pancake mix was far too wet to fry properly, the outside turned brown and the inside remained too moist that you couldn’t even flip them properly without it all falling apart.
May add flour to this recipe to soak up some of the moisture and make it more pancake than sludge (albeit healthy sludge)
